Lou's Lemon Chicken

I would like to take credit for this recipe but I cant.  I have to give credit where credit is due.  My husband created this dish for me last week.  This is the best lemon chicken I have ever had.  I will say that I love the flavor of lemon.  The amount of lemon juice this recipe calls for is a lot.  You can cut it down a bit, depending on your taste. 


You will need:

1 package of thinly sliced chicken breasts
1 package of fresh sliced mushrooms (we like mushrooms so we used two packages)
2 Tablespoons of olive oil
4 Tablespoons of butter
flour
salt and pepper
3/4 of a cup of dry white wine
1/4 cup of lemon juice
32 ounces of chicken stock
corn starch

In a bowl, mix  flour, salt and pepper
Bread the chicken breasts with this mixture
Heat 2 Tablespoons of olive oil and 2 Tablespoons of butter and cook the chicken.
Take the chicken out of the pan and set aside

Add 2 Tablespoons of butter to your pan and cook the mushrooms
When the mushrooms are cooked, add 3/4 of a cup of dry white wine. Let it reduce to about half.
Add 1/4 cup of lemon juice and the 32 ounces of chicken stock.
Thicken the sauce by adding 1 Tablespoon of corn starch and 3 tablespoons of water (mix this together in a separate container before adding. Make sure you stir it until it is smooth). You may have to repeat this step again, depending on how much it thickens. Let it come to a boil before you add more.

Put the chicken back in the pan and simmer for 10 minutes.
Serve with pasta or whatever you like!
You can slice a lemon to garnish this dish for a nice touch.


Pretty simple and delicious!

With my husband travelling again this week, I froze the leftovers so that I can enjoy it all week.
I made it last night and had to make more sauce. I added the chicken in the end so that the sauce would have flavor. It was also a good way to reheat the chicken without having to bake it.
This dish froze beautifully and it did not taste like leftovers at all! It was just as good the second time around! I am not typically a leftover eater either.

  3. Laura, can you ask Lou if I can make this without the mushrooms? Please? Mushrooms smell and taste like dirty feet to me (not that I have ever tasted a dirty foot...it's just what I imagine a dirty foot to taste like). And yes I have tried to acquire a liking for them but at the age I am now, I conclude it will not happen :) Much like Mr. B and liver! Other than the mushrooms the rest of the recipe looks so delish and I am all about lemons! Thanks for sharing this at the party this week (and the awesome shout out! You are truly the best!).

  4. Ooooh man. I am all over that chicken. Without the mushrooms. I just can't do the texture. Ya know, I think they call them mushrooms because they're so mushy and hard to chew that you run to the other room to spit them out so that no one sees.
    Or maybe that's just me
