Chocolate Chip Oatmeal Cookies


Baking season has begun. I am going to try and make it over to my mothers house some day this week and go through her recipe box. My mom was a great cook/baker. I say "was" because she doesn't really do it any more. I really wish she would.

Today I am going to share my recipe for chocolate chip oatmeal cookies. I have been making these cookies for years. It was a great way for me to sneak oatmeal into my kids diets without them even knowing. I never had any left over cookies that is for sure. I can make this recipe with my eyes closed.

You will need:



1 cup of butter (That is the equivalent of two sticks) I use one stick of salted butter and 1 stick of unsalted butter.
1 cup of sugar
1 cup of packed brown sugar
2 eggs
1 tsp. vanilla
2 cups of flour
2 1/2 cups of oatmeal (uncooked)
1/4 tsp of salt
1 tsp of baking powder
1 tsp of baking soda
1 1/2 packages of chocolate chips ( I use the mini chips)
1 Hershey bar

In a mixing bowl, cream butter and regular sugar. Add brown sugar that has been firmly packed.
 

If you have a food processor, mix the flour and oatmeal and blend it until the oatmeal/flour mixture turns to a fine powder and you cant see any oats left. You can also use a blender but will not be able to blend it all at one time.

 

Add eggs and vanilla to the butter and sugar mixture. Mix in the flour/oatmeal mixture a little bit at a time.

Add salt, baking powder and baking soda.

Fold in the chocolate chips a little at a time. Grate your Hershey bar with a cheese grater (any pieces that are too small too grate, pop in your mouth. Yes you heard me). Add it to your mixture.

 
 
On an ungreased cookie sheet, use a teaspoon or a small scoop so that the cookies are all relatively the same size. I use a scoop and it works beautifully.

 

Bake at 375 for 7-11 minutes. Check frequently, they can become too dark in seconds. You want them to almost look under cooked.


(try to remove them from the cookie sheet as soon as possible after you take them out of the oven or they will continue cooking)




You can add nuts if you like. You can also substitute the chocolate chips for mini M&M's,  Reese's Pieces or whatever you like. I have made these cookies with regular chocolate chips mixed with mint chocolate chips and they were just as good.

  3. The cookies really look good! I am not much of a baker. Not enough patience I guess, plus you really have to follow the rules (recipes) very closely. I love to cook when I have a gang to cook for, and I always ad lib to my hearts desire when cooking! Have a great day!
